Pumpkin Spice Cupcake ....

Fall is here and it is time to start baking!!! While at my local store I was looking for some new ideas for fall baking and I ran across this neat little kit from Duncan Hines.  Very simple and easy to make and the results are amazing! It comes with the Pumpkin Spice Frosting and the frosting bag so you do the filling and the outside of your cupcakes or you can just make a regular cake.
 

Pan Size / Bake Time

  • 9" round pan: 27-32 minutes
  • Cupcake Pan: 18-23 minutes

You Will Need

  • Cupcake Pouch:
  • 2 eggs
  • ¾ cup water
  • ¼ cup oil
  • Frosting Pouch:
  • 2 tsp. water
  • 1 stick butter (softened)

Baking Instructions

  1. Preheat oven to 350°F. Line muffins with baking cups.
  2. Empty contents of large pouch into a large bowl. Blend cake mix, water, oil and eggs in a large bowl at low speed until moistened (about 30 seconds). Scrape contents of bowl. Beat at medium speed for 2 minutes. Spoon batter evenly into the 12 cupcake liners (approximately ½ full).
  3. Bake in center of oven at 350°F for 18-23 minutes. Cupcakes are done when toothpick inserted in center comes out clean. Cool 5010 minutes in pan then remove and place on wire rack to cool completely
  4. Frosting Instructions:
  5. Mix softened butter with electric mixer on high for 1 minute or until light and fluffy. Scrape. Slowly add frosting mix to butter while mixing on slow speed for an additional 1 minute. Scrape. Add water. Start mixing on low. As frosting starts to come together, gradually increase speed to high. This step may take up to 3 minutes. Mix on high for an additional 3 minutes.
  6. Fill provided pastry bag with frosting (place bag in tall glass to make filling with frosting easier). Cut approximately ½" from the tip of the pastry bag. Insert cut pastry bag into top of cupcake and squeeze gently to fill cupcake with approximately one tbsp. of frosting. Slowly remove pastry bag and swirl approximately 1 tbsp. of frosting on top.

  7. You can also add Halloween or Autumn Sprinkle to the top of your finished cake. Makes it look really festive for coffee with the girls or something special just for you family.
